LOLLA
Lolla is a table accessory thought specifically for the storage and serving of truffles. The name comes from the Italian word for a recycled natural material obtained from the waste resulting from rice processing that was used in the past for truffle preservation due to its dehumidifying properties and its chemical neutrality in contact with food. The disc that the truffle is served on is made out of poplar, oak and lime wood peat, adding the typical smells of Mediterranean woods to Lolla. Lolla is divided in two separable parts: in the upper part the preservation container, in the bottom the slicer and its container, whose holes are meant to permit air circulation from the inside to outside through the peat disk, the metal filter and the lolla disk.
